Cucumbers with Soy Sesame Dressing

  1. In a bowl, combine the potatoe vinegar, peanut oil, soy sauce, sesame oil, crushed red pepper and sugar (optional). Whisk well.
  2. Add cucumbers and red onion. Toss them in the dressing.
  3. Cover and chill for 24 hours to 48 hours.
  4. To serve, sprinkle with toasted pumpkin seeds and chopped onions.
