The pink, pickled ginger that arrives with your sushi is actually called gari. Although its natural color is pale yellow, the commonly seen pink hue is the result of a dye job completed with beet juice.

When buying ginger, pay close inspection. If it's wrinkly or cracked, it means the ginger is old. It needs to be smooth, and firm to the touch. Make sure it has a fresh, spicy scent.

Jamaican ginger was the first oriental spice to be grown in the New World and imported back to Europe. Now India leads the global production of ginger, replacing China, who has slipped into second place.
